Healthified Crispy-Coated Chicken

Tonight's dinner was fabulous - again! When I first saw this dish, I fell in love and had to make it right away. The photo presentation alone had me sold. This is the second time I've made it, and it was awesome. I think the first time I made it with oven fries, and some other vegetable. Tonight, I made a side of Italian pasta salad -yum!
